Dave Miller, Co-Owner & Coffee Obsessive
Dave Miller didn't stumble into coffee he built a career around it. As the founder of Ipsento Coffee, he helped shape Chicago's specialty coffee culture from the ground up, opening one of the city's most beloved neighborhood cafés.
After Ipsento, Dave spent time working alongside the team at Dark Matter Coffee, one of Chicago's most celebrated and boundary-pushing roasters, deepening his craft and his obsession with sourcing exceptional beans.
This past year, Dave launched Moonbow Coffee- a new roasting project that brings together everything he's learned over two decades in the industry. Moonbow is focused on transparency, relationships with farmers, and roasting that lets the coffee speak for itself.
